University (WSU), invites applications for a fully funded MSc position under the MSc Food Security and Sustainable
Agriculture program with specialization in Food Science. The selected candidate WILL enrol as a full-time student.

Research Focus: Development and Optimization of Millet-Based School Meals for Primary Schools
The MSc student will lead research under the Food Product Development work package, focusing on creating nutritious,
culturally acceptable, and scalable millet-based school meals suitable for primary schools in Siaya County. Key research
activities include:
▪ Nutritional Analysis and Ingredient Profiling: Assess the nutritional composition of millet and complementary
ingredients.
▪ Product Development and Sensory Optimization: Formulate and refine acceptable, nutritious millet-based
school meal products.
▪ Food Safety and School Implementation: Develop safety protocols, standardize recipes, and train school kitchen
staff for large-scale preparation.
Opportunities

Eligibility
▪ Must be a Kenyan national with a BSc degree in Food Science, Human Nutrition, Dietetics, Food Technology, or
any related field
▪ Strong background in food chemistry, nutrition, or product development
▪ Interest in school feeding programs, child nutrition, and whole grain foods
▪ Ability to work in laboratory, school, and community settings
▪ Motivation for research and strong communication skills
